Personally, my favorite salads are the winter salad recipes, thanks to the gorgeous radicchio that's in season. A radicchio salad recipe is a perfect way to highlight its bold flavor, and when paired with other seasonal ingredients like sweet fruits, it transforms into a delicious salad that feels both elegant and satisfying.

Eating them during their peak also maximizes the health benefits they offer. For example, blood oranges are at their best in winter months, offering a vibrant burst of flavor along with a boost of antioxidants and vitamin C.

  3. Supporting Local Farmers
    Buying seasonal produce from local farmers markets or stores helps support the local economy. It ensures that small-scale farmers and growers can thrive, promoting sustainable farming practices and reducing the reliance on industrial agriculture.

Homemade Sherry Vinaigrette

  • 1 small shallot, finely diced

  • 1 teaspoon salt (adjust to taste)

  • 1/4 cup olive oil (extra virgin works great)

  • 2 tablespoons sherry vinegar

  • 1 teaspoon honey (more to taste, depending on your preference for sweetness)

  • Freshly cracked black pepper, to taste

Prepare the Shallot: Start by finely dicing the shallot. The smaller the dice, the more evenly it will distribute in the vinaigrette.

  1. Whisk the Ingredients Together: In a small bowl or jar, combine the diced shallot, salt, sherry vinegar, honey, and a few cracks of black pepper. Whisk everything together until the honey is dissolved and the shallot starts to soften a little in the vinegar.

  2. Add the Olive Oil: Slowly drizzle in the olive oil or extra virgin olive oil while continuing to whisk to emulsify the mixture. You want the oil and vinegar to combine into a smooth dressing.

  3. Taste and Adjust: Give your vinaigrette a taste. You can adjust the sweetness with more honey, the acidity with more sherry vinegar, or the salt and pepper to suit your liking.

  4. Serve or Store: Use immediately over your favorite salad, or store in a sealed jar or airtight container in the refrigerator for up to a week. Make sure to give it a good shake before using, as the oil and vinegar may separate over time.

Instructions

  1. Carefully tear the leaves from the leafy greens and radicchio. Rinse them with cold water, then use a salad spinner to remove any excess water.
  2. In a bowl or mason jar, combine all the ingredients for the sherry vinaigrette and shake until well mixed.
  3. Arrange the lettuces in a bowl, then drizzle the dressing over the top. Add the citrus segments, drizzle with more dressing, top with roasted hazelnuts, and finish with a sprinkle of flaky salt. Enjoy!
