This is my first time trying a viral TikTok trend, and I was pleasantly surprised by how delicious this bowl turned out. In case you haven’t heard, there's a viral taco bowl going around right now, which typically features ground taco meat. I made mine plant-based, adding creamy cottage cheese, roasted sweet potatoes, and fresh avocado, all topped with a drizzle of hot honey for a perfect sweet and spicy kick.

I added my own twist by adding kimchi and leafy greens for an extra boost of flavor and nutrition. I couldn’t believe how well everything came together — seriously, you have to try this!

Lately, it seems like the big trend is high-protein foods—protein-rich, low-carb, muscle-building options. Protein is essential as it provides the amino acids needed for muscles, bones, skin, and other tissues. It's crucial for muscle growth, recovery after injuries, and maintaining overall body structure.

Vegetarian Taco Bowl Ingredients

  • beyond ground meat (or any plant-based ground meat alternative)

  • taco seasoning (store-bought or homemade)

  • sweet potatoes, peeled and cubed

  • cottage cheese

  • kimchi

  • avocado, sliced

  • leafy greens (such as spinach, kale, or mixed greens)

Directions

Prepare the sweet potatoes

  • Preheat the oven to 400°F .

  • Toss the cubed sweet potatoes with a bit of olive oil, salt, and pepper.

  • Spread them out in a single layer on a baking sheet and roast until they are tender and lightly crispy on the edges.

Cook the beyond ground meat

  • In a large skillet, heat a little oil over medium-high heat.

  • Add the beyond ground meat and cook, breaking it apart with a spatula as it cooks.

  • Sprinkle in the taco seasoning and cook until well combined and heated through.

Assemble the taco bowl

  • Start by layering the leafy greens at the bottom of each bowl.

  • Add a scoop of roasted sweet potatoes on top of the greens.

  • Spoon the cooked beyond ground meat mixture over the sweet potatoes.

  • Add a dollop of cottage cheese to the bowl.

  • Top with chopped kimchi, avocado slices, and a drizzle of hot honey for that sweet and spicy kick.

Ingredients

Instructions

  1. Roast sweet potatoes: Toss cubed sweet potatoes with 1 tbsp olive oil, salt, and pepper. Roast at 400°F for 20-25 minutes, flipping halfway.
  2. Cook Beyond Ground Meat: Heat 1 tbsp olive oil in a skillet. Cook Beyond Ground Meat, breaking it apart. Add taco seasoning and cook for 2 minutes.
  3. Assemble bowl: Layer leafy greens in a bowl, drizzle with olive oil, and sprinkle with salt. Add roasted sweet potatoes, Beyond Ground Meat, cottage cheese, kimchi, avocado, and hot honey.
  4. Serve: Enjoy immediately!
