I just love me a quick and delicious one pan dish! A few weeks ago, I received an email inquiring whether a company could send me a box of their premium California-grown avocados. Intrigued by the offer, I was excited to learn more about their products and the opportunity to try some of the finest avocados grown in one of the most renowned agricultural regions!
This recipe, much like many others that I come up with, was born out of the creativity sparked by an empty fridge and a box of some of the best avocados I ever did try! When there’s little to work with, that’s when the best ideas often come to life.

Ingredients You’ll Need
1 block firm tofu, pressed and then crumbled
2-3 tbsp tofu scramble vegan spice mix
1 cup black beans (cooked)
1 handful fresh spinach
1/2 cup spicy chunky salsa
4 thin corn tortillas
1 avocado, sliced
1/2 cup Mexican-style cheese (vegan or regular)
Fresh cilantro (for garnish)

These 15-minute high-protein breakfast tofu tacos are a quick, delicious, and nutritious vegan option, packed with flavor and protein!

- Prepare the Tofu: Press the tofu to remove excess moisture, then crumble it into small pieces.
- Cook the Tofu: In a large skillet over medium heat, sauté the crumbled tofu with the tofu scramble vegan spice mix for 5-7 minutes, stirring occasionally, until it becomes slightly golden and heated through.
- Add Beans, Spinach, and Salsa: Add the beans, spinach, and salsa to the skillet with the tofu. Stir everything together and cook for another 2-3 minutes, until the spinach wilts and everything is heated through.
- Warm the Tortillas: While the tofu mixture is cooking, warm the corn tortillas in a dry skillet for 30 seconds on each side until soft and pliable.
- Assemble the Tacos: Layer each tortilla with the tofu, bean, spinach, and salsa mixture, then top with sliced avocado, Mexican-style cheese, and fresh cilantro.
- Serve: Serve immediately and enjoy your delicious, high-protein breakfast tacos!
