There have only been a handful of times when I’ve had pasta that was truly unforgettable, and one of those times was when I visited Rome, Italy. My goal with this recipe was to make a memorable and flavorful pasta recipe that captures the essence of summer. Introducing sungold gluten-free spaghetti with saffron.

What Is Saffron?
Saffron is a highly prized spice derived from the dried stigmas of the Crocus sativus flower. It is known for its vibrant red color and distinct flavor, which is both floral and slightly bitter. Saffron has been used for centuries in cooking, particularly in Mediterranean, Indian, and Middle Eastern cuisines, where it adds both color and flavor to dishes such as paella, risotto, and various desserts. It is one of the most expensive spices by weight due to the labor-intensive process required to harvest and process the delicate stigmas.

Spaghetti Plating
Spaghetti plating refers to the art or technique of arranging cooked spaghetti on a plate in an appealing and appetizing manner. Here are some tips for a good spaghetti plating:
Use a large plate: Spaghetti tends to spread out, so a larger plate gives you more space to work with.
Twirl the spaghetti: Use a fork to twirl the spaghetti into a neat bundle. This not only looks nicer but makes it easier to eat.
Sauce placement: Spoon the sauce over the center of the spaghetti. Avoid drowning the pasta in sauce; a moderate amount ensures each bite is flavorful without being overwhelming.
Garnish: Sprinkle grated Parmesan cheese or fresh herbs (like basil or parsley) over the top for added flavor and visual appeal.
Presentation: Consider the overall presentation of the plate. A clean edge around the plate and a neatly arranged bundle of spaghetti can make a big difference.
Remember, spaghetti plating is not just about functionality but also about making the dish look inviting and appetizing.

Sungold Gluten-Free Spaghetti With Saffron
Ingredients

- Bring a large pot of water to a boil and remove 1/4 cup and pour into a bowl. Add the saffron and set aside. Keep the water simmering with a lid to cook the pasta later and season the water with salt.
- Heat a large skillet on medium-low heat and coat with olive oil. After heating, add the shallots and cook until they soften and slightly brown on the edges, stirring occasionally for about 8 to 10 minutes.
- Add the garlic and Calabrian chili pepper and stir to incorporate. Sauté until fragrant, about one to two minutes.
- Pour in the tomatoes and reserved saffron and water. Increase the heat to medium and simmer until the tomatoes have started to burst, about ten minutes.
- Meanwhile, cook the pasta in the large pot of water just short of package directions. Drain and set aside.
- Use a blender to blend most of the tomato mixture, about 75%, until it becomes smooth.
- Reduce the heat to low and pour the sauce back into the skillet with the remaining tomatoes and add the pasta along with the butter. Toss everything together using tongs until the sauce becomes glossy and the pasta cooks a bit longer. Incorporate the parmesan and toss once more.
- Divide the pasta onto plates and top with extra parmesan, basil, a sprinkle of sumac and finishing oil. Season with salt and pepper to taste.
