Gluten Free Avocado & Egg Toast With Microgreens

 
 

I’m someone who thrives on a morning routine, and breakfast is always a highlight! This gluten free seed toast topped with creamy mashed avocado, boiled egg, and fresh microgreens is one of my all-time favorite go-to breakfasts which I eat most days.

Not only does it taste amazing, but it's also loaded with nutrients—packed with protein, healthy fats, and essential vitamins. Honestly, it’s the perfect start to my day, and it always leaves me feeling so happy and energized. What’s better than that?

I moved to New York City from New Jersey about three years ago and I’m fortunate that my apartment is just a few blocks from the Union Square Farmer’s Market. Honestly, it’s a chef’s dream! Over time, I’ve developed a list of favorite farm stands. I always get my weekly microgreens from Rooted Family Farm because they consistently offer fresh, delicious greens.

Ways to Use Microgreens

Microgreens are super versatile and can be added to many dishes! Here are some ideas:

  1. Salads – Toss them into any salad for extra flavor and crunch.

  2. Sandwiches & Wraps – Add them to sandwiches or wraps for a fresh, peppery bite.

  3. Smoothies – Blend them into smoothies for a nutritional boost without altering the flavor much.

  4. Tacos – Use them as a topping for tacos instead of lettuce for added freshness.

  5. Egg Dishes – Sprinkle on scrambled eggs, omelets, or poached eggs.

  6. Soups – Add as a garnish to soups for a pop of color and flavor.

  7. Pizza – Top your pizza with microgreens after baking for a fresh contrast.

  8. Grain Bowls – Add to quinoa, rice, or other grain bowls for texture and flavor.

  9. Avocado Toast – A perfect garnish to add on top of your toast for extra nutrients.

  10. Cheese Platters – Pair with cheeses for a fresh, vibrant addition.

Savor this delicious, protein-packed avocado and egg breakfast, served with seeded gluten-free bread and fresh microgreens.

Ingredients

Instructions

  1. Add egg, avocado, lemon juice, garlic, salt, pepper in a bowl and mix together.
  2. Toast your bread with olive oil over a medium flame until bread is golden on both sides.
  3. Spread avocado and egg mixture on bread and top with microgreens. sprinkle with flakey salt and enjoy!
