Chive Blossom Vinegar
One morning while I was working at abcV as a cook, I walked past my coworker who was delicately plucking these vibrant purple chive blossoms. Having never heard of chive blossoms before, my curiosity was piqued, and I eagerly sought to learn more about them.
To my surprise, a few days later, my Executive Sous Chef placed a ramekin of chive blossom vinegar on my dosa workstation, which inspired me to create my own. Chive blossom vinegar is versatile, adding flavor to dressings, stir-fries, soups, and even compound butter.
Despite their delicate appearance, chive blossoms pack a punch with their robust onion flavor. Despite their delicate appearance, chive blossoms pack a punch with their robust onion flavor.

- 1 cup white wine vinegar
Instructions

- In a small saucepan, heat the vinegar over a medium flame until it simmers.

- Once the infusion is complete, you’ll be greeted with a stunning pink hue in the vinegar! Strain out the blossoms and store the infused chive blossom vinegar in your cabinet.
Notes
Similar to squash blossoms, chive blossoms may harbor tiny bugs, so it’s important to rinse them thoroughly.
