Sungold Tomato Summer Salad

Delicious summer vegetable salad with a simple homemade dressing.

Ingredients

  • 12 sungold tomatoes, cut in half lengthwise
  • 12 sugar snap peas, split in half lengthwise - exposing the peas
  • 12 strawberries, cut in half lengthwise
  • 1 small kirby cucumber, cut into thin rounds
  • ½ cup of red currants
Garnish
  • Small red onion, thin rings
  • Basil
Dressing
  • ½ cup Extra Virgin Olive Oil
  • 3 tablespoons of fresh lemon juice (or more if you prefer)
  • Salt and pepper to taste

Instructions

  1. Fill a pot with water and season it with salt. Place on a high flame and bring to a boil. While it is coming up to temperature, prepare a bath of ice water for shocking your peas, and then de-stem the sugar snap peas.
  2. Next, wash all of your produce and allow them to dry. After, slice the sungold tomatoes and strawberries in half, lengthwise. Then, mandoline or cut the cucumber and red onion very thin. Measure ½ cup of red currants. Set your prepped ingredients aside.
  3. Make dressing. Put 3 tablespoons of Extra Virgin Olive Oil and 1 tablespoon of lemon juice into a jar. Add salt to taste and shake until well-combined.
  4. Blanch and shock sugar snap peas, and then halve them.
  5. Arrange produce decoratively on a plate and drizzle with the dressing. Garnish with red onion and basil.
